Filipino-style whole chicken marinated in soy sauce and peppercorns, stuffed with aromatics, and simmered in 7Up until tender. Finished with a reduced savory-sweet sauce poured over the carved chicken.

  • 1 whole chicken
  • 1/2 cup soy sauce
  • 1 1/2 teaspoons peppercorn crushed
  • 1 piece red onion minced
  • 3 bunches lemongrass tied into knots
  • 1 piece red onion sliced
  • 4 cloves garlic crushed
  • 3 tablespoons cooking oil
  • 1 liter 7 Up
  • 5 pieces star anise
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • salt

Instructions

  1. Place chicken on a plate or bowl. Pour soy sauce all over the chicken. Sprinkle crushed peppercorn and then rub all over the chicken.
  2. Insert onion and lemongrass into the cavity of the chicken. Let it stay for 10 minutes.
  3. Heat oil in a large cooking pot, and then sauté onion and garlic until the onion becomes soft.
  4. Add the marinated chicken. Cook one side in medium heat for 3 minutes. Turn the chicken over and cook the opposite side for 3 minutes.
  5. Pour the remaining marinade and 1 liter of 7Up (or any similar product). Let boil.
  6. Add star anise. Cover and cook between low to medium heat for 30 minutes.
  7. Turn the chicken over and continue to boil the opposite side for 12 minutes.
  8. Remove the chicken from the cooking pot. Slice in half and arrange on a serving plate.
  9. Continue to cook the sauce in the cooking pot until it reduces to half. Add garlic powder and onion powder. Stir.
  10. Filter the sauce using a kitchen sieve or strainer. Pour all over the chicken.
