Filipino rice porridge made with chicken and rice

Ingredients

- 2 lbs chicken cut into serving pieces
- 1 1/2 cups rice uncooked
- 1 maggi magic chicken cube
- 34 ounces water
- 8 cloves garlic chopped
- 3 onion chopped
- 5 egg hard boiled
- 1 cup green onion chopped
- 3 ginger
- 1 tablespoon safflower
- fish sauce
- ground black pepper
- 3 tablespoons cooking oil
Instructions

- In a pot, heat the cooking oil, then sauté the garlic, onion, and ginger.
- Add the chicken. Sauté until the outer layer turns golden brown.
- Add the uncooked rice. Sauté for 1 minute.
- Pour in the water and bring to a boil.
- Add the Maggi Magic Chicken Cube. Stir. Simmer until the rice is fully cooked (about 30 to 40 minutes). Note: Make sure to occasionally stir the mixture to prevent the ingredients from sticking to the bottom of the pan.
- Add the safflower and season with fish sauce. Stir.
- Add the hard-boiled eggs.
- Transfer to a bowl. Top with garlic, green onions, and squeeze some calamansi. Share and enjoy!
