  • 20 ounces young jackfruit
  • 1 cup malunggay leaf
  • 2 cups coconut milk
  • 3/4 cup dried anchovy
  • 4 pieces thai chili pepper
  • patis and ground black pepper
  • 3 tablespoons cooking oil

Instructions

  1. Heat oil in a pan.
  2. Saute onion and garlic.
  3. Once the onion softens, add anchovies. Cook for 30 seconds.
  4. Add the jackfruit. Continue to saute for 3 minutes.
  5. Pour coconut milk into the pan. Stir. Cover and cook in medium heat until the sauce reduces to half.
  6. Add malunggay leaves. Cook until the coconut milk evaporates.
  7. Season with ground black pepper and patis.
  8. Serve with warm rice. Share and enjoy!
