Round Steak in Criolla Sauce Recipe
Tender round steak simmered with aromatics and served with a vibrant Criolla sauce made with fresh tomatoes, bell peppers, onions, and vinegar. A flavorful make-ahead dish perfect for family dinners.

Ingredients

- 2 lbs round steak
- 6 cups water
- 1/2 tablespoon salt
- 1 tablespoon peppercorn
- 1 piece onion halved
- 1 piece leek chopped
- 1 piece tomato seeds removed and chopped finely
- 1 piece green bell pepper chopped finely
- 1/4 teaspoon garlic minced
- 1 tablespoon parsley chopped
- 1 piece yellow onion chopped finely
- 1 piece red bell pepper chopped finely
- 1/4 cup white wine vinegar
- 1/2 cup extra virgin olive oil
- salt
- ground black pepper
Instructions

- Pour water in a cooking pot and let boil.
- Put-in the halved onion, leeks, 1/2 tablespoon salt and whole peppercorns.
- Add-in the round steak and allow the water to re-boil. Simmer for 45 to 60 minutes or until the beef is tender.
- Remove the beef from the cooking pot and let the meat rest for 15 minutes. Slice thinly, and set aside.
- Make the Criolla Sauce by combining all the ingredients in a mixing bowl.
- Arrange the meat and the sauce in a serving plate by alternately layering the meat and the sauce.
- Refrigerate for at least 4 hours.
