  • 2 pieces filet mignon steak
  • 1 tablespoon peppercorn cracked
  • 1 1/2 cups red wine
  • 1 teaspoon salt
  • 1 piece onion minced
  • 3 tablespoons olive oil
  • 1 spear asparagus
  • 2 cups potato mashed

  1. Sprinkle salt on all sides of the steak, then rub with cracked pepper.
  2. Heat a pan over medium-high heat, then pour in 2 tablespoons of olive oil (add more if needed).
  3. When the oil is hot, pan-fry the steak for 3 minutes per side. Note: If the cut is thick, sear the sides as well.
  4. Preheat the oven to 350 degrees Fahrenheit.
  5. Bake the pan-fried steak for 6 to 8 minutes.
  6. Transfer the steak to a plate and set aside.
  7. In the same pan used for the steaks, add 1 tablespoon of olive oil (omit if there is enough oil remaining).
  8. Heat the pan and add the onions. Cook for 2 to 3 minutes, until softened.
  9. Pour in the red wine and simmer until reduced by half.
  10. Return the steak to the pan and cook for 30 seconds per side.
  11. Turn off the heat, then transfer the steak to a serving plate.
  12. Pour the red wine sauce over the steak.
  13. Serve with blanched asparagus and mashed potatoes.
  14. Serve immediately and enjoy!
