  • 4 lbs crab
  • 1 1/2 tablespoons oyster sauce
  • 1/2 teaspoon sesame oil
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 2 teaspoons sugar
  • 1 tablespoon cornstarch
  • 1/2 cup water
  • 1 cup scallion chopped
  • 2 to 3 tablespoons ginger minced
  • 2 teaspoons garlic minced
  • 3 cups cooking oil

  1. Combine the oyster sauce, sesame oil, salt, ground black pepper, sugar, garlic, cornstarch, and water in a bowl. Stir until well blended, then set aside.
  2. Heat the cooking oil in a wok or deep pan over medium-high heat.
  3. Deep fry the crabs for 3 minutes. Remove them from the wok and let the excess oil drip off.
  4. Remove most of the oil from the wok, leaving about 2 tablespoons. Sauté the ginger and scallions for 2 minutes.
  5. Return the fried crabs to the wok. Pour in the sauce mixture, then toss to combine and cook for 1 minute.
  6. Turn off the heat and transfer to a serving plate. Serve and enjoy!
