Upo Guisado Recipe
This is a recipe for upo guisado or sauteed bottle gourd with pork.

Ingredients

- 1 bottle gourd sliced
- 6 ounces pork belly sliced into small pieces
- 1 plum tomato cubed
- 1 yellow onion chopped
- 4 cloves garlic crushed
- 1/4 teaspoon ground black pepper
- 3 tablespoons cooking oil
- 1 1/2 cup water
Instructions

- Heat oil in a pan
- Sauté garlic, onion, and tomato
- Add the pork. Cook for 3 minutes
- Pour 1 cup water. Let boil. Adjust the heat to medium and then continue to cook until the liquid completely evaporates
- Add the sliced upo. Stir and then cook for 5 minutes.
- Season with ground black pepper and fish sauce.
- Add water. Cook for 2 minutes.
- Transfer to a serving bowl. Serve.
